Ingredients

  • 1 bunch kale, stems removed and leaves chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup red onion, diced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the kale, feta cheese, olives, and red onion.
  2. In a separate bowl, whisk together the olive oil, lemon juice, honey, and Dijon mustard. Season with salt and pepper, to taste.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.
