Ingredients

  • 2 sheets of store-bought shortbread pastry
  • 3 large apples, peeled, cored, and thinly sliced
  • 1/4 cup of white sugar
  • 1 teaspoon of ground cinnamon
  • 2 tablespoons of butter, melted
  • 1/4 cup of light brown sugar

Directions

  1. Preheat oven to 375°F.
  2. Roll out one sheet of the shortbread pastry and use it to line a 9-inch pie plate.
  3. In a large bowl, combine the apple slices, white sugar, and cinnamon. Mix until the apples are evenly coated.
  4. Spoon the apple mixture into the pastry-lined pie plate and spread out evenly.
  5. Roll out the second sheet of shortbread pastry. Cut into strips and arrange them in a lattice pattern over the top of the apple mixture.
  6. Brush the top of the pie with melted butter and sprinkle with the light brown sugar.
  7. Bake in preheated oven for 40 minutes, or until the top is golden brown and the filling is bubbly.
