Remove from the heat and stir in the cilantro.
Lay out the tortillas on a clean work surface. Place a heaping spoonful of the chicken and vegetable mixture in the center of each tortilla.
Sprinkle with the shredded cheese, and fold the tortilla in half.
Heat a large skillet over medium heat. Place the quesadillas in the skillet and cook until golden brown and the cheese has melted, about 2-3 minutes per side.
