Chicken and Vegetable Quesadillas

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1 bell pepper, diced
  • 1 jalapeno, minced
  • 3 garlic cloves, minced
  • 1 cup cooked and shredded chicken
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1/4 cup chopped cilantro
  • 4-6 flour tortillas
  • 1 1/2 cups shredded cheese

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5 minutes.
  2. Add the jalapeno and garlic, and cook for another minute.
  3. Add the cooked chicken, chili powder, cumin, salt, and pepper, and cook for another 2-3 minutes, stirring occasionally.
  4. Remove from the heat and stir in the cilantro.
  5. Lay out the tortillas on a clean work surface. Place a heaping spoonful of the chicken and vegetable mixture in the center of each tortilla.
  6. Sprinkle with the shredded cheese, and fold the tortilla in half.
  7. Heat a large skillet over medium heat. Place the quesadillas in the skillet and cook until golden brown and the cheese has melted, about 2-3 minutes per side.
  8. Serve warm with your favorite toppings, such as sour cream, salsa, or guacamole.
