Ingredients

  • 2 cups fresh cherries, pitted
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch

  • 1 package refrigerated pie crusts
  • 1 tablespoon milk
  • 1 tablespoon turbinado sugar

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium saucepan, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir well to combine.
  3. Cook the cherry mixture over medium heat, stirring constantly, until the mixture thickens and becomes glossy. This will take about 5-7 minutes. Remove from heat and let it cool slightly.
  4. Unroll one pie crust onto a lightly floured surface. Spoon half of the cherry mixture onto the center of the crust, leaving a border around the edges.
  5. Carefully fold the edges of the crust up and over the cherry filling, creating pleats every inch or so. Repeat with the remaining pie crust and filling.
  6. Transfer the folded cherry pies onto a baking sheet lined with parchment paper.
