Ingredients
2 packages ramen noodles
4 cups baby spinach
2 cups shredded cheese
1/4 cup chopped red onions
4 large eggs
1/4 cup milk
Salt and pepper to taste
Directions
Preheat oven to 350°F.
Cook ramen noodles according to package directions. Drain and set aside.
In a large bowl, combine cooked noodles, spinach, cheese, and onions.
In a separate bowl, whisk together eggs and milk. Pour over noodle mixture and mix until combined.
Season with salt and pepper. Pour into a greased 9x13 inch baking dish.
Bake for 25-30 minutes, or until eggs are cooked through and top is golden brown.
Serve warm.
