Ingredients

  • 2 packages ramen noodles
  • 4 cups baby spinach
  • 2 cups shredded cheese
  • 1/4 cup chopped red onions
  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Cook ramen noodles according to package directions. Drain and set aside.
  3. In a large bowl, combine cooked noodles, spinach, cheese, and onions.
  4. In a separate bowl, whisk together eggs and milk. Pour over noodle mixture and mix until combined.
  5. Season with salt and pepper. Pour into a greased 9x13 inch baking dish.
  6. Bake for 25-30 minutes, or until eggs are cooked through and top is golden brown.
  7. Serve warm.
