Ingredients

  • 1 lb. fresh asparagus
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup cold water
  • Vegetable oil, for frying

Directions

  1. Wash and trim the asparagus, removing any woody ends.
  2. In a mixing bowl, combine the flour, cornstarch, salt, and baking soda. Slowly add the cold water, whisking continuously until the batter is smooth and lump-free.
  3. Heat the oil in a deep skillet or deep fryer to 375 degrees F.
  4. Dip each asparagus spear into the batter, making sure to coat it evenly. Carefully add the battered asparagus to the hot oil. Fry for 3-4 minutes, or until the tempura is golden brown and crispy.
  5. Remove the tempura from the oil and place it on a paper towel-lined plate to absorb any excess oil.
