Ingredients

  • 1 lb carrots, sliced
  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup breadcrumbs

Directions

  1. Preheat oven to 375°F and grease a baking dish.
  2. Boil carrots in a pot of water for 5 minutes, then drain and set aside.
  3. In a skillet, melt butter over medium heat and sauté onions until translucent.
  4. Stir in flour and gradually add milk, stirring until smooth and thickened.
  5. Add cheddar cheese, Parmesan cheese, salt, pepper, and garlic powder, stirring until cheeses melt.
  6. Mix in carrots and transfer everything to the prepared baking dish.
