Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Directions

  1. Preheat the oven to 375°F.
  2. Cut a pocket into each chicken breast, being careful not to cut all the way through.
  3. Stuff each chicken breast with cherry tomatoes, mozzarella slices, and basil leaves. Season with salt and pepper.
  4. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side.
  5. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  6. In a small saucepan, combine balsamic vinegar, honey, and minced garlic. Simmer over low heat until the sauce thickens, about 10 minutes.
  7. Remove the chicken from the oven and drizzle with balsamic reduction. Serve hot and enjoy!
