Ingredients

  • 1 cup of carrots, diced
  • 1 cup of broccoli, diced
  • 2 tablespoons of butter or olive oil
  • 1/4 cup of water

Directions

  1. In a medium saucepan, heat the butter or olive oil over medium-high heat.
  2. Add the diced carrots and broccoli, and sauté for 5 minutes until lightly browned.
  3. Add the water and reduce the heat to low. Simmer for 10-15 minutes, until the carrots and broccoli are tender.
  4. Carefully remove the saucepan from the heat and transfer the contents to a blender or food processor. Puree until smooth.
  5. Serve warm or at room temperature.
