Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 cup frozen peas
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the mushrooms and cook until they begin to brown, about 8 minutes.
  4. Stir in the thyme and rosemary and cook for 1 minute more.
  5. Add the peas and vegetable broth and simmer for 5 minutes.
  6. Stir in the cream and season with salt and pepper to taste.
  7. Simmer for 5 minutes more or until the sauce has thickened.
  8. Serve hot.
