Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 pound mushrooms, sliced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 cup frozen peas
1/2 cup vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the mushrooms and cook until they begin to brown, about 8 minutes.
Stir in the thyme and rosemary and cook for 1 minute more.
Add the peas and vegetable broth and simmer for 5 minutes.
Stir in the cream and season with salt and pepper to taste.
Simmer for 5 minutes more or until the sauce has thickened.
Serve hot.
