Ingredients
1 lb. cooked, peeled shrimp
2 avocados, peeled and diced
3 tomatoes, diced
1/4 cup cilantro, chopped
1/4 cup diced red onion
1/2 cup cooked black beans
1 cup lettuce or greens, chopped
1/4 cup lime juice
1/4 teaspoon cumin
Salt and pepper to taste
4-6 burrito-sized flour tortillas
Directions
In a medium bowl, combine the shrimp, avocado, tomatoes, cilantro, red onion, black beans, and lettuce or greens.
In a small bowl, whisk together the lime juice, cumin, salt, and pepper.
Pour the lime juice mixture over the shrimp and avocado mixture and mix until combined.
Heat a large skillet over medium heat.
Place one tortilla in the skillet and heat for 1-2 minutes until lightly browned and crispy.
Flip the tortilla over and spread 1/4 of the shrimp and avocado mixture on one half of the tortilla.
Fold the other half of the tortilla over the filling and press down lightly.
Cook for 1-2 minutes until lightly browned and crispy.
Repeat with the remaining tortillas and filling.
Cut the wraps in half and serve.
