Ingredients
- 1 lb. cooked, peeled shrimp
- 2 avocados, peeled and diced
- 3 tomatoes, diced
- 1/4 cup cilantro, chopped
- 1/4 cup diced red onion
- 1/2 cup cooked black beans
- 1 cup lettuce or greens, chopped
- 1/4 cup lime juice
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 4-6 burrito-sized flour tortillas
Directions
- In a medium bowl, combine the shrimp, avocado, tomatoes, cilantro, red onion, black beans, and lettuce or greens.
- In a small bowl, whisk together the lime juice, cumin, salt, and pepper.
- Pour the lime juice mixture over the shrimp and avocado mixture and mix until combined.
- Heat a large skillet over medium heat.
- Place one tortilla in the skillet and heat for 1-2 minutes until lightly browned and crispy.
- Flip the tortilla over and spread 1/4 of the shrimp and avocado mixture on one half of the tortilla.
- Fold the other half of the tortilla over the filling and press down lightly.
- Cook for 1-2 minutes until lightly browned and crispy.
- Repeat with the remaining tortillas and filling.
- Cut the wraps in half and serve.
