Shrimp and Avocado Wraps

Ingredients

  • 1 lb. cooked, peeled shrimp
  • 2 avocados, peeled and diced
  • 3 tomatoes, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup diced red onion
  • 1/2 cup cooked black beans
  • 1 cup lettuce or greens, chopped
  • 1/4 cup lime juice
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 4-6 burrito-sized flour tortillas

Directions

  1. In a medium bowl, combine the shrimp, avocado, tomatoes, cilantro, red onion, black beans, and lettuce or greens.
  2. In a small bowl, whisk together the lime juice, cumin, salt, and pepper.
  3. Pour the lime juice mixture over the shrimp and avocado mixture and mix until combined.
  4. Heat a large skillet over medium heat.
  5. Place one tortilla in the skillet and heat for 1-2 minutes until lightly browned and crispy.
  6. Flip the tortilla over and spread 1/4 of the shrimp and avocado mixture on one half of the tortilla.
  7. Fold the other half of the tortilla over the filling and press down lightly.
  8. Cook for 1-2 minutes until lightly browned and crispy.
  9. Repeat with the remaining tortillas and filling.
  10. Cut the wraps in half and serve.
