- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour

- 1/2 cup quick-cooking oats
- 1 (3.4-ounce) package instant vanilla pudding mix
- 1/2 cup caramel bits
Directions
- Preheat the oven to 375 degrees F (190 degrees C). Grease baking sheets.
- In a medium bowl, cream together the butter, granulated sugar, and brown sugar until smooth. Beat in the egg and vanilla. Combine the flour, baking soda, and cinnamon; stir into the creamed mixture. Mix in the oats and pudding mix. Stir in the caramel bits.
- Drop by rounded spoonfuls onto the prepared baking sheets. Bake for 10 minutes in the preheated oven, or until golden brown. Let cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
