In a large pot, heat olive oil over medium-high heat. Add chicken and cook until golden brown, about 5 minutes. Add onion and garlic and cook until softened, about 5 minutes.
Add chicken bouillon, salt, pepper, and thyme and bring to a boil. Reduce heat and simmer for 10 minutes.
Add rice and butter and stir to combine. Cover and reduce heat to low. Simmer for 15 minutes or until the rice is tender.
