Ingredients
- 1 lb. chicken, cubed
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken bouillon
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon dried thyme
- 1 1/2 cups long grain white rice
- 2 tablespoons butter
Directions
- In a large pot, heat olive oil over medium-high heat. Add chicken and cook until golden brown, about 5 minutes. Add onion and garlic and cook until softened, about 5 minutes.
- Add chicken bouillon, salt, pepper, and thyme and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add rice and butter and stir to combine. Cover and reduce heat to low. Simmer for 15 minutes or until the rice is tender.
- Serve hot with a side of your favorite vegetables.
