Creamy Pasta with Asparagus and Prosciutto

Ingredients

  • 1 pound of penne pasta
  • 3 tablespoons of olive oil
  • 1/2 onion, chopped
  • 2 cloves of garlic, minced
  • 1/4 teaspoon of red pepper flakes
  • 1/2 cup of white wine
  • 1 cup of heavy cream
  • 1/2 cup of Parmesan cheese, grated
  • 1/2 pound of asparagus, trimmed and cut into 1-inch pieces
  • 4 ounces of prosciutto, cut into thin strips
  • Salt and pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package directions.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and red pepper flakes and cook for an additional 1 minute.
  4. Add the white wine and cook until reduced by half, about 3 minutes.
  5. Stir in the cream and Parmesan cheese and bring to a simmer.
  6. Add the asparagus and prosciutto and cook until the asparagus is tender, about 5 minutes.
  7. Drain the pasta and add it to the skillet with the sauce and vegetables. Stir to combine.
  8. Season with salt and pepper and serve.
