Ingredients

  • 1 pork shank, about 2 pounds
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 onion, diced
  • 1 cup of chicken broth
  • 1 (15 ounce) can of white beans, drained and rinsed

Directions

  1. Preheat the oven to 350 degrees F.
  2. In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and pepper. Rub the pork shank all over with the mixture.
  3. Heat the olive oil in a large oven-safe pot over medium-high heat. Add the pork shank and brown on all sides, about 8 minutes.
  4. Reduce the heat to medium-low and add the garlic and onion to the pot. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  5. Add the chicken broth and white beans to the pot and stir to combine. Bring to a simmer and then transfer to the preheated oven.
  6. Bake for 1 hour and 15 minutes, or until the pork is cooked through and the liquid has reduced by half.
  7. Serve hot.
