Ingredients

  • 2 lbs. beef chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz.) can diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

  1. Place the chuck roast in the slow cooker.
  2. Add the onion, garlic, diced tomatoes, chili powder, cumin, oregano, salt, and pepper.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender and easily shredded.
  5. Shred the beef with two forks and stir to combine.
  6. Serve with tacos, burritos, or with a side of rice and beans.

Interesting Facts

  • This dish can also be made in the oven. Preheat the oven to 325°F and cook for 2-3 hours, until the beef is tender.
  • This dish can also be made in a pressure cooker. Cook on high pressure for 45 minutes, and then quick release.
