Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 2 potatoes, diced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (14.5 oz) can beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Directions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring often, until it is browned. Drain off any fat.
  2. Transfer the cooked beef to the slow cooker. Add the onion, garlic, carrots, celery, bell pepper, potatoes, tomatoes, beef broth, Worcestershire sauce, oregano, thyme, basil, salt and pepper. Stir to combine.
  3. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  4. Serve the stew hot with crusty bread or over cooked rice or mashed potatoes.
