Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 pound fresh spinach, washed
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup Italian-style bread crumbs
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
- In a large skillet, cook spinach in olive oil until wilted. Remove from heat and cool.
- In a medium bowl, mix together mozzarella cheese, Parmesan cheese, bread crumbs, parsley, garlic powder, salt, and pepper.
- Place chicken breasts in the prepared baking dish. Stuff each breast with cooled spinach, and top with cheese mixture.
- Bake in preheated oven for 25 to 30 minutes, or until chicken is cooked through and juices run clear.
