Ingredients
2 pounds carrots, peeled and cut into 1-inch pieces
2 fennel bulbs, cut into 1-inch pieces
2 tablespoons olive oil

Directions
Preheat oven to 350 degrees F (175 degrees C).
Spread carrots and fennel out on a baking sheet. Drizzle with olive oil and toss to coat.
In a small bowl, whisk together orange juice, maple syrup, salt, and pepper. Pour over carrots and fennel and toss to coat.
Roast in preheated oven for 20 to 25 minutes, stirring once, until vegetables are tender and lightly browned.
Sprinkle with parsley and serve.
