Ingredients
- 2 pounds carrots, peeled and cut into 1-inch pieces
- 2 fennel bulbs, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1/4 cup orange juice
- 1/4 cup pure maple syrup
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons chopped fresh parsley
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Spread carrots and fennel out on a baking sheet. Drizzle with olive oil and toss to coat.
- In a small bowl, whisk together orange juice, maple syrup, salt, and pepper. Pour over carrots and fennel and toss to coat.
- Roast in preheated oven for 20 to 25 minutes, stirring once, until vegetables are tender and lightly browned.
- Sprinkle with parsley and serve.
