Ingredients

  • 1 package of chorizo
  • 1/2 head of cabbage, shredded
  • 1/2 red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 avocado, diced
  • 1 lime, juiced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 package of taco shells

Directions

  1. In a large skillet, cook the chorizo over medium-high heat until browned and crumbled. Set aside.
  2. In the same skillet, add the cabbage, onion, cilantro, avocado, lime juice, cumin, chili powder, salt, and pepper. Cook for 3-4 minutes, stirring often, until the vegetables are softened.
  3. Add the cooked chorizo to the vegetable mixture and stir to combine.
  4. Warm the taco shells according to the package directions.
  5. Fill each taco shell with the chorizo and vegetable mixture.
  6. Serve immediately.
