Ingredients
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 pound boneless, skinless chicken thighs, cut into cubes
- 1 zucchini, cut into cubes
- 1 red bell pepper, cut into cubes
- 1/2 cup slivered almonds
Directions
- In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper until combined.
- Add the chicken cubes and vegetables and toss to coat with the marinade.
- Cover and refrigerate for at least 30 minutes.
- Preheat a grill or grill pan to medium-high heat.
- Thread the chicken and vegetables onto skewers, alternating between the two.
- Grill the kabobs for 8-10 minutes, flipping once, until the chicken is cooked through.
- Sprinkle the almonds over the kabobs and cook for another 2-3 minutes, flipping once.
- Remove from the heat and serve warm.
