Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 pound boneless, skinless chicken thighs, cut into cubes
  • 1 zucchini, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 1/2 cup slivered almonds

Directions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper until combined.
  2. Add the chicken cubes and vegetables and toss to coat with the marinade.
  3. Cover and refrigerate for at least 30 minutes.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Thread the chicken and vegetables onto skewers, alternating between the two.
  6. Grill the kabobs for 8-10 minutes, flipping once, until the chicken is cooked through.
  7. Sprinkle the almonds over the kabobs and cook for another 2-3 minutes, flipping once.
  8. Remove from the heat and serve warm.
