Ingredients
- 1 cup of all-purpose flour
- 1 cup of wheat bran
- 1/2 cup of sugar
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 egg, beaten
- 1/2 cup of vegetable oil
- 1/2 cup of milk
- 1 teaspoon of vanilla extract
Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper liners.
- In a large bowl, mix together the flour, bran, sugar, baking soda, and salt. In a separate bowl, combine the egg, oil, milk, and vanilla extract.
- Stir the wet ingredients into the dry ingredients, just until combined. Spoon batter into the prepared muffin cups.
- Bake for 20 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
