1 pound boneless, skinless chicken breasts, cut into cubes
1/2 cup buttermilk
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
Vegetable oil for frying
Directions
In a medium bowl, combine the chicken cubes, buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Mix until all the chicken cubes are evenly coated. Cover and refrigerate for at least 30 minutes.
In a shallow bowl, combine the flour, baking powder, cayenne pepper, oregano, and thyme. Mix until all the ingredients are well blended.
Heat the vegetable oil in a large skillet over medium-high heat.
Remove the chicken cubes from the marinade and roll in the flour mixture. Make sure each cube is evenly coated.
Carefully add the chicken cubes to the hot oil and fry until crispy and golden brown, about 3-4 minutes per side. Make sure to turn the chicken cubes often so they don’t burn.
Remove the chicken cubes from the oil and place on a paper towel-lined plate to drain any excess oil. Serve warm.
