Ingredients
- 1 lb. shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 sweet potatoes, peeled and cubed
- 1 (14.5 oz.) can diced tomatoes
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook for 3-4 minutes, or until the onion is translucent.
- Add the sweet potatoes and cook for an additional 5 minutes.
- Add the tomatoes, chicken broth, chili powder, and cumin. Simmer for 20 minutes, or until the sweet potatoes are tender.
- Add the shrimp and cook for 3-4 minutes, or until the shrimp is cooked through.
- Season to taste with salt and pepper.
- Garnish with cilantro and serve.
