Ingredients
- 2 tablespoons butter
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups chicken or vegetable broth
- 1 cup beer
- 1/2 teaspoon dried thyme
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 2 cups shredded sharp cheddar cheese
Directions
- Melt the butter in a large pot over medium heat.
- Add the onion, celery and carrots and cook until softened, about 5 minutes.
- Add the garlic and cook for an additional minute.
- Stir in the flour and cook for 2 minutes.
- Slowly whisk in the broth, beer, thyme, Worcestershire, mustard, nutmeg, paprika and pepper.
- Bring the soup to a boil, reduce the heat and simmer until the vegetables are tender, about 10 minutes.
- Stir in the cheese and cook until melted, about 5 minutes.
- Serve the soup warm.
