2 tablespoons butter
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cloves garlic, minced
2 tablespoons all-purpose flour

1 cup beer

Directions
Melt the butter in a large pot over medium heat.
Add the onion, celery and carrots and cook until softened, about 5 minutes.

Slowly whisk in the broth, beer, thyme, Worcestershire, mustard, nutmeg, paprika and pepper.
Bring the soup to a boil, reduce the heat and simmer until the vegetables are tender, about 10 minutes.
Stir in the cheese and cook until melted, about 5 minutes.
Serve the soup warm.
