Ingredients

  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 1 cup beer
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 2 cups shredded sharp cheddar cheese

Directions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion, celery and carrots and cook until softened, about 5 minutes.
  3. Add the garlic and cook for an additional minute.
  4. Stir in the flour and cook for 2 minutes.
  5. Slowly whisk in the broth, beer, thyme, Worcestershire, mustard, nutmeg, paprika and pepper.
  6. Bring the soup to a boil, reduce the heat and simmer until the vegetables are tender, about 10 minutes.
  7. Stir in the cheese and cook until melted, about 5 minutes.
  8. Serve the soup warm.
