Ingredients

  • 1 large sweet potato
  • 1 can black beans
  • 1/2 cup oats
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1 garlic clove, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Oil, for cooking

Directions

  1. Preheat oven to 400F.
  2. Wash and prick sweet potato with a fork. Wrap in a paper towel and microwave it for 5 minutes.
  3. In a large bowl, mash sweet potato with a fork. Add black beans, oats, onion, bell pepper, garlic, cumin, chili powder, and smoked paprika. Mix until combined.
  4. Form the mixture into 4 patties and season with salt and pepper.
  5. Heat oil in a large skillet over medium-high heat. Add the patties and cook for about 4-5 minutes per side.
  6. Transfer the patties to a baking sheet and bake in the oven for 15 minutes.
  7. Serve on a bun or with your favorite toppings.
