Ingredients

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 8-10 corn tortillas
  • 1 cup shredded cheese

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large skillet, cook the ground beef and onion over medium heat until beef is browned and onion is softened.
  3. Stir in chili powder, cumin, garlic powder, salt, and pepper. Cook and stir for 1 minute.
  4. Remove from heat and set aside.
  5. In a large skillet, heat olive oil over medium-high heat. Cook each tortilla for 15-20 seconds each side, or until lightly browned.
  6. In a 9×13 inch baking dish, layer 4-5 tortillas. Top with half of the beef mixture. Sprinkle with half of the cheese.
  7. Repeat layers of tortillas, beef mixture, and cheese.
  8. Bake for 15 minutes, or until cheese is melted and bubbly.
  9. Let cool for 5 minutes before serving.
