Ingredients
- 1 pound ground beef
- 1/2 cup diced onion
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 8-10 corn tortillas
- 1 cup shredded cheese
Directions
- Preheat oven to 375 degrees F.
- In a large skillet, cook the ground beef and onion over medium heat until beef is browned and onion is softened.
- Stir in chili powder, cumin, garlic powder, salt, and pepper. Cook and stir for 1 minute.
- Remove from heat and set aside.
- In a large skillet, heat olive oil over medium-high heat. Cook each tortilla for 15-20 seconds each side, or until lightly browned.
- In a 9×13 inch baking dish, layer 4-5 tortillas. Top with half of the beef mixture. Sprinkle with half of the cheese.
- Repeat layers of tortillas, beef mixture, and cheese.
- Bake for 15 minutes, or until cheese is melted and bubbly.
- Let cool for 5 minutes before serving.
