Ingredients
- 1 head of broccoli, cut into small florets
- 1/2 cup of almonds, slivered
- 1/2 cup of sunflower seeds
- 1/2 cup of dried cranberries or raisins
- 1/2 cup of cooked black beans
- 1/4 cup of mayonnaise
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of honey
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
Directions
- In a large bowl, combine broccoli, almonds, sunflower seeds, raisins, and black beans.
- In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, mustard, and salt and pepper.
- Pour dressing over broccoli mixture and toss until everything is evenly coated.
- Serve immediately or chill in the refrigerator for up to 4 hours.
