Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup melted butter
  • 1/2 teaspoon salt
  • 1/4 cup cornstarch
  • 1/2 cup all-purpose flour
  • 2 tablespoons grated lemon zest
  • 1/2 cup grated fresh coconut (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  2. In a medium bowl, whisk together eggs, sugar, milk, vanilla extract, cinnamon, melted butter, and salt until smooth.
  3. In a separate bowl, combine cornstarch, flour, and lemon zest. Add to wet ingredients and mix until combined.
  4. Stir in coconut, if using. Pour mixture into prepared muffin tin.
  5. Bake for 20-25 minutes, or until golden brown and set.
  6. Remove from oven and let cool for 10 minutes before serving.
