Ingredients
- 3 eggs
- 1 cup sugar
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/2 cup melted butter
- 1/2 teaspoon salt
- 1/4 cup cornstarch
- 1/2 cup all-purpose flour
- 2 tablespoons grated lemon zest
- 1/2 cup grated fresh coconut (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
- In a medium bowl, whisk together eggs, sugar, milk, vanilla extract, cinnamon, melted butter, and salt until smooth.
- In a separate bowl, combine cornstarch, flour, and lemon zest. Add to wet ingredients and mix until combined.
- Stir in coconut, if using. Pour mixture into prepared muffin tin.
- Bake for 20-25 minutes, or until golden brown and set.
- Remove from oven and let cool for 10 minutes before serving.
