Ingredients
- 1 ½ cups finely ground chocolate cookie crumbs
- 5 tablespoons melted butter
- 4 tablespoons sugar
- 2 tablespoons cocoa powder
- 1 (14-ounce) can sweetened condensed milk
- 1 (3.5-ounce) package instant chocolate pudding mix
- ¾ cup heavy cream
- 1 teaspoon peppermint extract
- 2 tablespoons crème de menthe
- Green food coloring (optional)
- Whipped cream (optional)
Directions
- Preheat oven to 375°F (190°C).
- Mix together cookie crumbs, butter, sugar, and cocoa powder in a medium bowl until well combined.
- Press mixture firmly into the bottom and sides of a 9-inch pie plate.
- Bake for 8-10 minutes, or until crust is lightly golden brown.
- Allow to cool completely.
- In a large bowl, combine condensed milk, pudding mix, cream, peppermint extract, and crème de menthe. Beat with an electric mixer until smooth and creamy.
- If desired, add a few drops of green food coloring and mix until evenly distributed.
- Pour mixture into cooled pie crust and spread evenly.
- Chill pie in refrigerator for at least 4 hours before serving.
- If desired, top with whipped cream before serving.
