Ingredients
- 1 tablespoon olive oil
- 1 leek, finely chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 1 head of broccoli, chopped
- 3 cups vegetable broth
- 2 cups shredded cabbage
- Salt and pepper to taste
Directions
- Heat the oil in a large pot over medium heat.
- Add the leek, onion, garlic, carrots and broccoli. Cook for 5 minutes, stirring occasionally.
- Add the vegetable broth and bring to a boil.
- Reduce heat to low and simmer for 15 minutes.
- Add the cabbage and cook for 5 minutes more.
- Season with salt and pepper to taste.
- Serve warm.
