Ingredients

  • 1 cup wheat flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup honey
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup mashed banana
  • 1/2 cup fresh or frozen blueberries

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  2. In a large bowl, stir together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the honey, butter, vanilla extract, and egg until smooth.
  4. Stir the mashed banana and blueberries into the egg mixture.
  5. Add the wet ingredients to the dry ingredients and stir until just blended.
  6. Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for 15 to 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.
