Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 1/2 cups mashed ripe bananas
  • 1/2 cup chopped nuts
  • 1/2 cup chopped dried fruit

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together the sugar and butter. Beat in the eggs, one at a time.
  4. Mix in the mashed bananas. Gradually stir in the dry ingredients until just blended.
  5. Stir in the nuts and dried fruit. Spoon the batter into muffin cups lined with paper liners.
  6. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
