Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup frozen fava beans
  • 1/2 cup frozen peas
  • 2 tablespoons olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large saucepan over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
  2. Add the rice and stir to coat in the oil. Cook for 1 minute.
  3. Add the white wine and cook until it is absorbed, about 2 minutes.
  4. Add the broth, one cup at a time, stirring after each addition until it is absorbed. When the last cup is added, reduce heat to low and cover.
  5. Add the fava beans and peas and stir to combine. Cook for 10 minutes.
  6. Remove from heat and stir in the Parmesan cheese and parsley. Season with salt and pepper to taste.
  7. Serve hot.
