Ingredients
- 6 potatoes, peeled and cubed
- 1 onion, diced
- 3 cloves of garlic, minced
- 4-6 slices of bacon, diced
- 2 tablespoons of butter
- Salt and pepper to taste
Directions
- In a large pot, add the potatoes and enough water to cover them.
- Bring the water to a boil and cook for 15 minutes or until the potatoes are tender.
- Drain the potatoes and return them to the pot.
- Mash the potatoes until smooth.
- In a skillet over medium heat, add the bacon and cook until crisp.
- Add the onion and garlic and cook for 3-4 minutes or until softened.
- Add the onion and garlic mixture to the mashed potatoes and mix until combined.
- Stir in the butter and season with salt and pepper to taste.
- Serve hot.
