  • 3/4 cup vegetable oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups shredded zucchini
  • 1/2 cup semisweet chocolate chips


  1. Preheat the oven to 350 degrees F.
  2. Grease a 9x5 inch loaf pan.
  3. In a large bowl, whisk together the oil, sugar, eggs, and vanilla extract until smooth.
  4. In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Stir in the shredded zucchini and chocolate chips until evenly distributed.
  7. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool before slicing and serving.
