Ingredients

  • 1 cup brown rice, cooked
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt, or to taste
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14-ounce) can coconut milk
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook for 5 minutes, stirring occasionally, until softened and lightly browned.
  3. Add the garlic and cook for 1 minute, stirring frequently.
  4. Add the cumin, coriander, garam masala, turmeric, ginger, chili powder, and salt and cook for 1 minute, stirring frequently.
  5. Add the tomatoes and coconut milk and bring to a simmer.
  6. Add the cooked brown rice and stir to combine.
  7. Cover the skillet, reduce the heat to low, and cook for 10 minutes.
  8. Add the frozen peas and cook for 5 minutes, stirring occasionally.
  9. Stir in the cilantro and mint.
  10. Serve warm.
