Directions
Heat the olive oil in a large skillet over medium heat.

Add the garlic and cook for 1 minute, stirring frequently.
Add the cumin, coriander, garam masala, turmeric, ginger, chili powder, and salt and cook for 1 minute, stirring frequently.
Add the tomatoes and coconut milk and bring to a simmer.
Add the cooked brown rice and stir to combine.
Cover the skillet, reduce the heat to low, and cook for 10 minutes.
Add the frozen peas and cook for 5 minutes, stirring occasionally.
Stir in the cilantro and mint.
Serve warm.
