Ingredients

  • 4 boneless chicken thighs
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 mango, diced
  • 1/4 cup red onion, diced
  • 1 jalapeno, seeded and diced
  • 2 tablespoons lime juice
  • 1/4 cup cilantro, chopped
  • 1 tablespoon honey

Directions

  1. Preheat the broiler.
  2. In a small bowl, mix together the chili powder, garlic powder, paprika, salt, and pepper. Rub this mixture evenly onto both sides of the chicken thighs.
  3. Place the chicken on a baking sheet and broil for 8-10 minutes, flipping halfway through.
  4. Meanwhile, in a medium bowl, mix together the mango, red onion, jalapeno, lime juice, cilantro, and honey.
  5. Once the chicken is cooked through, serve with the mango salsa.
