Roasted Bell Peppers with Sunflower Seeds

Ingredients

  • 3 bell peppers, any color
  • 1/4 cup sunflower seeds
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F.
  2. Cut the bell peppers into strips and place on baking sheet.
  3. Sprinkle the sunflower seeds over the peppers.
  4. Drizzle with olive oil and sprinkle with cumin, salt and pepper.
  5. Roast in the oven for 25-30 minutes, stirring occasionally, until the peppers are soft and lightly browned.
  6. Serve warm or cold.
