Directions
Preheat oven to 375°F (190°C). Grease an 8-inch (20 cm) oven-safe skillet or baking dish.
In a medium bowl, combine the cranberries, sugar, and cinnamon. Stir to combine, then spread evenly in the prepared skillet.
In a large bowl, whisk together the eggs, flour, milk, vanilla, salt, and melted butter until smooth.
Pour the batter over the cranberries, and bake for 25-30 minutes, or until the top is golden brown and the center is set.
Let cool for 15 minutes before serving. Sprinkle with confectioners’ sugar before serving.

Using cranberries instead of cherries gives the clafouti a unique tart flavor.
Clafouti can be served warm or cold.
