In a small bowl, combine the rice vinegar, sugar and salt. Heat in the microwave for 1 minute, stirring occasionally, until the sugar and salt are dissolved.
Place the cooked sushi rice in a large bowl and add the vinegar mixture. Stir to combine.
Lay a sheet of nori on a sushi rolling mat. Spread one-half cup of the sushi rice onto the nori, leaving a 1-inch border on all sides.
Lay the cucumber, carrot, avocado, bell peppers, and mayonnaise in a row down the center of the nori. Sprinkle the sesame seeds over the vegetables.
Using the rolling mat, roll the nori up from the bottom. Wet the top edge of the nori with a few drops of water to help seal the roll. Cut the roll into 8-10 pieces with a sharp knife.
Repeat with the remaining ingredients.
Serve the sushi with soy sauce.
