Ingredients
2 tablespoons butter
1 onion, diced
1 teaspoon garlic, minced
2 tablespoons all-purpose flour
2 cups chicken broth
1 cup whole milk
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups frozen corn
1 pound lump crabmeat
3 tablespoons chopped parsley, for garnish
Directions
Melt the butter in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
Stir in the flour and cook for 1 minute.
Add the chicken broth, milk, paprika, thyme, salt, and pepper and bring to a simmer. Simmer for 10 minutes, stirring occasionally.
Add the corn and crabmeat and simmer for an additional 5 minutes.
Serve the chowder topped with chopped parsley.
