Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 1 teaspoon garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups frozen corn
  • 1 pound lump crabmeat
  • 3 tablespoons chopped parsley, for garnish

Directions

  1. Melt the butter in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  2. Stir in the flour and cook for 1 minute.
  3. Add the chicken broth, milk, paprika, thyme, salt, and pepper and bring to a simmer. Simmer for 10 minutes, stirring occasionally.
  4. Add the corn and crabmeat and simmer for an additional 5 minutes.
  5. Serve the chowder topped with chopped parsley.
