Ingredients
- 1 tablespoon olive oil
- 1/2 cup butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1 pound peeled and deveined shrimp
- Salt and pepper, to taste
- 1/2 cup heavy cream
- 1/4 cup freshly chopped parsley
- 1/4 cup freshly grated Parmesan cheese
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the butter and garlic and cook until the garlic is fragrant, about 1 minute.
- Add the white wine and bring to a simmer.
- Add the shrimp and season with salt and pepper.
- Cook until the shrimp are just cooked through, about 5 minutes.
- Stir in the cream and simmer for 2 minutes.
- Stir in the parsley and Parmesan cheese.
- Serve the shrimp scampi over cooked pasta or rice.
