Ingredients
- 1 tablespoon butter
- 1/4 cup diced onions
- 1/4 cup diced celery
- 1/4 cup diced carrots
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup diced broccoli florets
- 1/2 cup cooked crawfish
- 1/2 cup shredded sharp cheddar cheese
- Salt and pepper, to taste
Directions
- In a large saucepan, melt butter over medium heat.
- Add onions, celery, carrots, and garlic and cook until vegetables are softened, about 5 minutes.
- Add chicken broth and bring to a boil. Add broccoli and cook for 5 minutes.
- Add crawfish and cook for 2 minutes.
- Reduce heat to low and stir in cheese until melted. Season with salt and pepper.
- Serve warm.
