Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons ground cumin
- 2 tablespoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 ounce) can diced tomatoes
- 2 (15.5 ounce) cans black beans, drained and rinsed
- 1 cup vegetable broth
- 2 tablespoons chopped fresh cilantro
Directions
- Heat the olive oil in a large saucepan over medium heat.
- Add the onion and garlic and sauté for 3-4 minutes, or until the onion is soft and translucent.
- Stir in the tomato paste, cumin, chili powder, salt, and pepper and cook for 1 minute.
- Add the diced tomatoes, black beans, and vegetable broth and stir to combine.
- Bring the mixture to a boil, reduce the heat to low, and simmer for 15 minutes.
- Remove from the heat and stir in the cilantro before serving.
