Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 2 (15.5 ounce) cans black beans, drained and rinsed
  • 1 cup vegetable broth
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and garlic and sauté for 3-4 minutes, or until the onion is soft and translucent.
  3. Stir in the tomato paste, cumin, chili powder, salt, and pepper and cook for 1 minute.
  4. Add the diced tomatoes, black beans, and vegetable broth and stir to combine.
  5. Bring the mixture to a boil, reduce the heat to low, and simmer for 15 minutes.
  6. Remove from the heat and stir in the cilantro before serving.
