Ingredients

  • 1 lb of bow-tie pasta
  • 1 lb of Italian sausage
  • 2 sweet peppers, diced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 28oz can of diced tomatoes
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Directions

  1. In a large pot of boiling salted water, cook the bow-tie pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage, sweet peppers, onion, and garlic. Cook, stirring occasionally, for about 8 minutes, or until the sausage is cooked through.
  3. Add the diced tomatoes to the skillet and bring to a simmer. Simmer for about 5 minutes, or until the sauce has thickened.
  4. Add the cooked pasta to the skillet and stir to combine. Season with salt and pepper to taste.
  5. Divide the pasta among serving plates and top with grated parmesan cheese.
