Ingredients

  • 4 cups bok choy, chopped
  • 1 red bell pepper, diced
  • 1/4 cup toasted almonds, chopped
  • 1/4 cup sesame seeds
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the bok choy, red bell pepper and almonds.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, honey and soy sauce. Pour the dressing over the salad and toss to combine.
  3. Sprinkle with sesame seeds and season with salt and pepper to taste.
  4. Serve immediately.
