Ingredients
1 package instant polenta
1/4 cup olive oil
1 can black beans, drained and rinsed
1/4 cup diced red onion
1/4 cup diced red bell pepper
1/4 cup diced jalapeno pepper
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
Salt and pepper to taste
Directions
Prepare the polenta according to package instructions.
Pour the prepared polenta into a 9x13 inch baking pan and spread it evenly.
Chill the polenta in the refrigerator for at least 30 minutes.
Heat a grill pan over medium-high heat.
Cut the chilled polenta into 1-inch cubes and brush with olive oil.
Grill the polenta cubes for 3-4 minutes per side, until golden brown.
In a medium bowl, combine the black beans, red onion, bell pepper, jalapeno pepper, cilantro, lime juice, salt and pepper.
Serve the grilled polenta bites with the black bean salsa.
