Creamy Tomato Tuna Penne Pasta

Ingredients

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 (12 ounce) can tuna, drained
  • 1/2 cup grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil over high heat. Add the penne pasta and cook until al dente, about 8 minutes. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the diced tomatoes, tomato paste, sugar, oregano, basil, thyme, red pepper flakes, salt and black pepper. Simmer for 10 minutes.
  3. Stir in the heavy cream and simmer for 5 minutes. Add the tuna and cooked pasta and cook until heated through, about 5 minutes.
  4. Serve the pasta topped with grated Parmesan cheese.
