Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 4 cups vegetable broth
  • 2 (15-ounce) cans white beans, drained and rinsed
  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1 (4-ounce) can diced green chilies
  • 1 cup uncooked brown rice

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the oregano, basil, thyme, paprika, pepper, and salt and cook for another minute.
  3. Add the vegetable broth, beans, tomatoes, chilies, and rice. Bring to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.
  4. Serve hot.
